Unfortunately some shows run and run way past their peak and it kinda tarnishes their overall reputation. Mention any examples you can think of where shows you liked should have been taken behind the barn and put out of their misery sooner than they were.
I’ll get The Simpsons out of the way. It was great for close to 10 years but for about the last 12/15 it’s been average. Although I will be a little sad on the day it does officially end. I just hope they can muster up one great final episode when that time comes.
The Office should have ended when Michael Scott left. That would have been the perfect final episode. But it continued on and the show’s now a shell of its former self.
The last two seasons of Seinfeld fell off a cliff with Larry David no longer writing. I think season 7 would have been the perfect time to end it. The main stars were making like $250,000 an episode though and the ratings were still so high so it’s easy to see why they went on for another two years.
Entourage got boring after about 3 seasons and basically started repeating storylines they had already done, just adding different celebrity cameos each week.

Smallville
It started off well and continued that way for several years. It was cool seeing the interwoven plots between a young Superman and his base friends and family. The transition away from Lex Luthor and Clark in his hometown was bumpy though and it never really recovered it's initial appeal. Eventually it became a just-like-every-other-with-villain-of-the-week-centered superhero style show.
Xena
Was great when it revolved around Ares (RIP actor Kevin Smith)and Callisto. Then that horrible character Alti arrived and everything went to shit. Callisto even went good. And the whole thing turned into one "I love you, you love me, we are bonded for eternity" soap fest between Xena and Gabrielle.

Scrubs
The first 8 seasons were amazing and the season 8 finale was complete and utter perfection, so why not end it there? Why revive it for one more horribly done season? Season 9 was the worst thing ever.

I hope when the Simpsons end they still do a Treehouse of Horror episode every year. It's the only time I watch new episodes.
Totally agree on Scrubs. The only highlight of the final season was Dr. Mahoney.
Chuck had a great final episode towards the end of Season 3. They should have just left it there.
House lost it's charm about halfway through its run.
