The less-heralded matches that you remember enjoying. Not ones that are already highly acclaimed classics such as Trish/Lita, Trish/Mickie, Melina vs. Alicia Fox, etc.
Trish Stratus vs. Victoria: Unforgiven 2004 – I liked this better than their more famous 2002/03 matches.
Trish Stratus vs. Melina: Survivor Series 2005 – In 2005 this was like the dream diva match for me and I was surprised it came together so quickly since usually the brand split was still enforced at the time.
Eve vs. Maryse: Over the Limit 2010 – I couldn’t enjoy this at the time because of the result but in hindsight it was a good match.
To include a TV match, I always liked Maryse's matches with Gail Kim, especially their Divas title match on SmackDown from the UK in 2009.

I loved the second Trish vs. Melina on Raw the next year too but I don't know if they're underrated. I consider them all-time classics. B-)
In terms of match quality I think Mickie and Trish had their best match at NYR. It went from jokey to stiff in a blink.
Victoria/Molly at Vengeance 04 is a forgotten masterclass.

I'm not entirely sure if this is considered underrated but this is by far one of my favorite matches in general:
I still think 2008 was one of the best years for the Divas, they had multiple storylines going on at once, and a major storyline that didn't involve a title. It's just a shame that they can't put forth this much effort for the girls like they did at that time.
Though I wasn't watching around this particular time, this is one of the matches I found myself emotionally involved in, the crowd was into it too. It's sad to think that this was the match that would lead to Candice's downfall, but holy shit she was amazing here. Beth too, one of the few times I'd found her interesting.
